Heisenberg, formerly known as Bochan German Beer Restaurant, entered Hangzhou Hubin Yintai in77 in 2015. In 2016, all the brands in Shanghai, Hangzhou, Shenzhen and other places were flopped into Haxnbauer Heisenberg Modern German Restaurant, re-establishing the brand positioning. The name "Haxnbauer" is a combination of the German "Haxn" and "Bauer", "Haxn" means pork knuckle, and "Bauer" refers to the agriculturist.
The restaurant's menu is developed by the Group's Executive Chefs, Mr Tassotti and Mr Christoph, both of whom have worked in German restaurants around the world and have many years of experience in German cuisine. Chef Mario of Heisenberg Hangzhou is a native of Germany who has been in the industry since he was a child and has rich experience in German cuisine.
Heisenberg's restaurant calls itself the "German pork knuckle expert", and pork knuckle is naturally Heisenberg's signature dish. The restaurant has indeed shown full sincerity in the dish of pork knuckle, with eight different flavors, and the rich choice has far surpassed that of its peers. Heisenberg has also carried out strict standardization of pork knuckle materials and cooking, according to the restaurant, all pork knuckles here are 100% grain-fed, each pork knuckle has a uniform weight of about 2.6 catties, and the cooking method is streamlined. Heisenberg has 8 types of pork knuckle to choose from: Classic Original Pork Knuckle, German Pesto Pork Knuckle, Rich Lafite Pork Knuckle, Cheese Pork Knuckle, Provencal Rosemary Pork Knuckle, Devil's Flame Pork Knuckle, Berlin Traditional Pork Knuckle, Black Pepper Pork Knuckle and Lava Chocolate Pork Knuckle. Among them, the traditional pork knuckle in Berlin is the favorite Eisbein in North Germany, commonly known as "German ice leg", cooked in a low-heat steaming method, compared with roast pork knuckle, it is more tender and soft, rich in fat and fragrant, but greasy, and has a completely different flavor from crispy pork knuckle. Pork knuckle is a traditional Bavarian recipe, but with the exception of the Berlin tradition, there are several other flavors of pork knuckle that are baked in Bavarian variations, with only crispy pork knuckle roasted in the corresponding sauce or spice, with chocolate and cheese being the most pleasing of the flavors. Heisenberg's pork knuckle has been cut open when it is served, easy to eat, the skin is crisp, the fat is rich, and the meat is crispy, and the production is of a high standard among German restaurants in the same city.
In addition to pork knuckle, German sausages will not be left behind by Heisenberg, Nuremberg sausage, snail sausage, garlic sausage, spicy chicken sausage, Berlin currywurst and Munich white sausage and other classic German sausages are listed one by one, each sausage has potato salad, German sauerkraut and other side dishes and sauces, and the extended version of Nuremberg sausage "ruthless sausage" is even more eye-catching. In addition to sausages and pork knuckles, Heisenberg's dishes are mostly traditional South German Bavarian cuisine or German-speaking Austrian, Alsatian and Swiss cuisines, such as flame pie, German beef soup, Austrian veal, German cheese pasta, dark beer barbecue, etc. Platters of meat and sausages in different portions provide a convenient solution for diners who are struggling to order.
The desserts and breads in the restaurant are of medium and high standard among the German restaurant peers, such as the classic German apple puff pastry, sweet and cinnamon aroma, melon seeds, raisins and other materials, and the puff pastry is in place. The flavors such as Kaisersman and German bread are decent, and the classic afternoon tea set for two in the afternoon also includes a variety of German desserts and breaded cold meats, which is more cost-effective. It is worth noting that the waiter will not offer the afternoon tea menu, and diners in need can take the initiative to request it.
Hangzhou Heisenberg is located in Yintai in77, with a unique architectural style, surrounded by three combinations, with terraces and adjacent windows on the second floor, and the dining space is comfortable and comfortable, private but not dark and oppressive. The waiters are well staffed, which can give diners enough private space and maintain the density of on-call distribution, which is more comfortable. In 2018, Heisenberg became the global restaurant partner of the German Football League, and has a close relationship with the Chinese fan associations of Bundesliga giants Bayern Munich and Dortmund.
Located next to the river on Qingchun Road, the noisy music beer bar is also a well-known German restaurant and bar in Hangzhou, but the characteristics of Huoke's German cuisine are not significant, and there are almost no German food elements on the menu except for the three classics of pork knuckle, sausage and beer, so it is not included in this list.
