Live beads
The living beads test their guts, and their appearance resembles an egg, but the inside has been embryonized, like a young version of a hairy egg. According to the local mainstream custom, the egg head must be knocked out of the "skylight", sucked the juice sealed by the inner shell membrane, and then peeled and dipped in pepper and salt to taste the remainder.
The juice inside the egg has a salty, fresh and fishy smell, which is very similar to the flavor of egg custard. The "yolk" part is elastic and slightly fishy, while the chicken-shaped meat is quite tender. Overall, the taste is not stunning, and it is suitable for the curious. It should be reminded that live beads only contain less sterol than eggs, which is far from enough to improve health, and eating live beads can only represent bravery and exploration.
Liuhe District is the hometown of live beads, as early as around 2004, there are more than 300 professional farmers, with the continuous entry of large-scale manufacturers, around 2017, the peak sales of live beads have exceeded 200,000 pieces / day, and even exported to Yunnan. In addition to Liuhe District, live beads also appear in the alleys of old areas such as Mochou Lake, Nanhu Lake, and Kexiang, and are mostly sold by mobile vendors.
