The authentic iron pot stewed lamb must be made of Heng goat from northern Shaanxi, Fu Maoyuan follows the mainstream, the cooked mutton is tender and flavorful, and the hall of the store is almost always full of aroma. However, in terms of ingredients alone, Fumaoyuan actually has a big shortcoming. This is due to the source of meat, and numerous studies have confirmed that high-quality wool varieties tend to have more fatty acids. The goat belongs to the fine cashmere goat, which is a breed with fine wool. After 1950, almost all the sheep in the country embarked on the road of improvement, with the intention of producing finer wool. Northern Shaanxi sheep is no exception, which makes the meat value of Hengshan goat gradually go to the trough, although this momentum has been reversed, but looking at the northwest, Hengshan goat is still a strong breed. The disadvantage of the ingredients is evident in the white soup that the staff adds to the stove, and the smell is unbearable.

When the ingredients are not dominant, cooking skills are even more important. Spices such as gelatin leaves and shallots in the soup can also mask the lamb's belly. The mutton is uniformly packed and kept at a simmer to maintain the temperature, during which the water inevitably evaporates, which makes the spice flavor stronger and the salty taste more distinct. For the same reason, this phenomenon is also evident in the bottom of the customer's pot, where the iron pot stew is suitable for customers who prefer a savoury diet.

Fumoyuan offers a wide range of side dishes, many of which are mutton, and the meat skewers and lamb loins are grilled on site, including roast lamb treasures, which are strange ingredients and have a tender taste. "Big dishes" such as gourd chicken, sauerkraut fish, and abalone are also included, and there is no shortage of home-cooked Shaanxi dishes such as small crispy meat and oily tofu.

Many stores in Fumaoyuan will play northern Shaanxi folk music at the entrance, and the melody beats greatly, but the interior of the restaurant is not a scene of "singing and dancing". The waiters in the store refill the soup and water in a timely manner, and the professionalism is higher than that of similar restaurants. The decoration design is not separated from elements such as lanterns and wide benches, but there are not many natural lights in each store, and the dining stations are matched with spotlights, which is slightly elegant. The gray surface of the distressed brick wall is clean and tidy.
