If you're familiar with Speak Low, you've probably heard of Sober Company, which opened in early 2017, is a multi-concept complex built by the Speak Low team in Shanghai, offering customers a one-stop way to eat. Unlike Speak Low's meticulous and discreet designation, the Sober Company's logo and space division are very simple, with elegant and calm gray-blue storefronts that read: Sober Café, Sober Kitchen, and Sober Society, respectively, a café, a restaurant, and a bar.
Chef Tokumei Ka, a Taiwanese who grew up in Japan and works in New York, is a unique and interesting blend of Japanese and Western cuisine. The restaurant's cocktails are also different, with the signature cocktail Canal Street also making enough oriental flavors, with celadon teapots and teacups in the smoky tray, but the Pisco wine mixed with chrysanthemum tea is poured out, and the fruity notes of lychee, pomegranate and lemon are added, which is sweet and sour without heavy alcohol. The Kitchen's cocktails are all about ingredients, especially the blend of oriental fruits and wines, such as Lolita from NoLita with lime and plum astringency, or Newport with pineapple seaweed, ginseng and black lemon blended with gin and whiskey. These bartenders are made by Lizzy, who is from Russia and won the 2013 Bacardi World Championship, which is quite a figure.
Enter the other door to the Sober Society, a formal drinking space that continues the style of Speak Low, where the head bartender is Kazuhisa Harai, the winner of the 2016 Jameson Bartenders' Ball, who smells the strange and rich aromas of the Society when she first walks in. In order to achieve the ultimate experience of sight, smell and taste, such as Matatlán, Mezcal and Tequila, two types of tequila are a combination of sweet almond wine and bitters, soft and dry, and the flavor of smoky tang spices is very unique, and the entrance is clear and exotic.
From the café to the Society, ordinary people are already slightly drunk, and it's a joke to come to this bar called sober (sobriety). In fact, the real intention of the cunning founder is: "If you are still sober, don't leave yet." - If you are still awake, then stay a little longer. This subtle hint can be seen in the logo of the Sober Company, where the letter o in the sober is slightly tilted to the right, like a half-drunk and half-awake person.
In order to entice drinkers to complete the entire journey from Café to Society, Sober Company has set up a fourth secret space, Tipsy, where you can enter with a glass of wine each in Café, Kitchen and Society. Tipsy doesn't have a wine list and can only order one drink per person, and the mystery bartenders in Tipsy are rotated between founder Shingo Gokan, Sober Society's head bartender Kazuhisa Harai and Atsushi Suzuki, including Atsushi Suzuki, the overall winner of the 2017 Chivas Regal Cocktail Masters, Speak Low and Sober One of the company's chief bartenders and soul figures. At Tipsy you can make a request for a drink, and then you will be served a cocktail specially made for guests. If you're looking for a cocktail or want to see a master bartender at work, drink all the way from the Café to Tipsy.
