Alam, which translates to "soul" in Spanish, matches the restaurant philosophy that each dish has its own meaning and unique taste. As a new Spanish restaurant that opened in 2016, Alma has been selected as a Bib Gourmand restaurant in the Michelin Guide for two consecutive years from 2017 to 2018. Bib Gourmand is not a star rating or a Michelin recommendation, but it is by no means a consolation prize. The name comes from Bib Gourmand, the affectionate Michelin tyre gentleman and ambassador of the Michelin brand, who was selected by 25 judges to have affordable cuisine "under 200 yuan per person". Among the 27 restaurants in Shanghai that were selected as Bib Gourmand, Alam was the only Spanish restaurant.

Led by three-Michelin-starred chefs Daniel Negreira and Sergio Moreno, the restaurant is a Tapas workshop led by DN Group, a creative Spanish culinary team. In addition to 5J ham, red shrimp and paella, Alma's creative cuisine is a fresh and mysterious Spanish country.

Alam's menu is very diverse, with colorful pictures of dishes on the menu that will whet your appetite when you look at them, and a dizzying selection of more than 20 tapas. The chef's signature salad, "Shake Your Soul", is a must-try salad made with salmon, orange, grapefruit, sesame seeds, cherry radish, and mixed lettuce leaves. Another salmon salad has a rich red, green and yellow color scheme, the salmon is marinated in the chef's secret spices in advance, and the texture is smooth, with a light salty aroma with watercressy, chicory, mango and orange, and the addition of sweet and sour sauce vinaigrette, which is more refreshing and appetizing. This salad is also thoughtfully enlarged, making it suitable for multiple people to share.

Beef cheek toastThis Tapas is full of sincerity, the beef cheek meat is almost the most tender piece of the cow, simply braised and stewed is delicious enough, the restaurant is ingenious to stew pineapple and beef cheek meat together, the soup is fresh and rich pineapple, a thick pile is covered with a large pile of toast, the soup is soaked in toast, and then covered with a slice of raw mushrooms to clear the mouth. There is a degree of dryness and wetness, and the layers are clear. The restaurant's Bib Gourmand dish is the Chicken Liver Pie, which is made with chicken liver mixed with a dash of foie gras, which tastes sweet, smooth and delicate, with a hint of wine. The outside is covered with a layer of organic pollen granules, and the cocoa is thin and crispy, which can be mixed and eaten to increase the taste. Choosing chicken liver mixed with foie gras can avoid the high price of 100% foie gras, and the blend will not only preserve the flavor of the foie gras, but also allow diners to taste the taste at a good price.

In Spanish restaurants, in addition to "Tapas", "Paella" is also a regular on the menu. "Paella" is one of the national dishes of Spain, originating from the Valencia region of Spain, and is a rice dish cooked in a large iron pot Paellera. Paella de Marisco is a type of Paella, which is basically the most intuitive impression of Spanish cuisine. Alma's traditional paella is a popular favourite, with juicy prawns as the main ingredient, peeled and lightly bitten. The names of the desserts are very interesting, including coconut mousse in summer, chocolate cake in autumn, chestnut puree in winter, tiramisu mousse in spring, and two classic Western desserts in red wine and pear and lemon tart. The restaurant concept is positioned as a Gastrobar, and in addition to the abundance of food, there is also a wide selection of drinks. The four- or five-page wine menu includes almost all the wines, and here you can also try Estara stout from Spain.

Alma Restaurant is located on the 9th floor of Joy City North District, adjacent to the romantic Sky Ring Ferris wheel in Joy City. The outdoor plaza on the top floor has a wide view and fresh air, and it is as if you have forgotten the disturbances of the city. The floor-to-ceiling transparent glass windows allow diners to feel the atmosphere of air and freedom indoors, and the outdoor outdoor seats can directly watch the brilliant lights of the Ferris wheel at night, but it should be noted that the wind on the top floor is strong at night, so you need to be mentally prepared to dine outdoors. The restaurant service is basically in place, and generally does not take the initiative to report the name of the dish, and diners need to take the initiative to ask, but most of the non-Fine Dining Western restaurant services that do not charge service fees are like this, and it is normal to maintain a basic service level.
