Wuchang fish is one of the main freshwater farmed fish in China, and Ezhou is known as the "hometown of Wuchang fish". Around Wuchang fish, there are countless historical allusions and delicacies produced in Ezhou's food culture.
Wuchang fish, named after the Three Kingdoms period. In the first year of Ganlu of Eastern Wu (265 AD), the last emperor Sun Hao wanted to move the capital from Jianye to Wuchang. Zuo Prime Minister Lu Kaishang dissuaded and quoted the phrase "I would rather drink Jianye water than eat Wuchang fish". As a result, Wuchang fish gradually became known.
Since then, the literati of the past dynasties have left many poems related to Wuchang fish. For example, the poem of Cen Shen in the Tang Dynasty: "Autumn comes to remember Wuchang fish, and the dream soul is only in Baling Road." Su Shi's poem in the Song Dynasty: "The Yangtze River winds around the silhouette to know the beauty of fish, and the bamboo is fragrant with bamboo shoots." In 1958, Chairman Mao Zedong's poem "only drank Changsha water and ate Wuchang fish" was widely circulated, which really made Wuchang fish famous at home and abroad.
In 1965, Wuchang fish was officially named Hubei local cuisine and became the leading food of Hubei cuisine. The masters of Hubei cuisine inherited and carried forward the cooking skills of the famous chefs of the past dynasties, and used the local products of Hubei as the ingredients to produce hundreds of different flavors of delicacies such as steamed Wuchang fish, Wuchang fish with tempeh, Wuchang fish with chopped pepper, and air-dried Wuchang fish, among which the most prestigious is the steamed Wuchang fish. Nowadays, Wuchang fish delicacies are extremely popular in Hubei, Hunan, Jiangxi, Anhui and other places. The graphic sign of "Ezhou Wuchang Fish" has been registered with the State Trademark Office, and the certificate of origin trademark has been officially approved and registered by the Trademark Office of the State Administration for Industry and Commerce.
