Lamb soup dumplings
Originated from Kaifeng, the soup dumplings were even the originator of the southern xiaolongbao, but with the course of history, the influence of the latter gradually surpassed the former. Mutton soup dumplings are the crystallization of soup dumplings in Xi'an, and after improvement, mutton has replaced pork as the protagonist. The way to eat mutton soup dumplings is not as particular as that of southern xiaolongbao, and it is the most authentic way to eat it when you put it in your mouth and eat it with juice overflowing your mouth. The mutton soup is full of umami, the mutton is tender and springy, and the skin is tough and chewy.
In Xi'an, there are very few shops that make mutton soup dumplings, and Jia San's soup dumplings are the most famous.
