Cockscomb dumplings
Chicken comb dumplings are one of the special snacks in Wuhan, which are fried snacks made of noodles and named because they resemble chicken combs.
The most traditional cockscomb dumplings are made by deep-frying old noodles. The degree of fermentation and hardness of old noodles have a decisive influence on the taste of food, and only the master who has been making chicken comb dumplings for many years can grasp the degree of it. The chicken comb dumplings fried with old noodles are crispy and soft, chewy, and described as "brute meat lump" in Wuhan dialect.
The dough is delicate, but the process of frying it is very bold. The chef picks up the filling and puts it on top of the dough, then stretches the dough, folds it in half, stretches the two ends, puts it in the oil pan, and it can be out of the pan in about three minutes.
