Nine-foot duck is divided into two series: braised duck and wind-blown duck, of which braised duck is cooked food, while wind-blown duck is raw food, which needs to be eaten after cooking. The duck of the nine-foot duck is made of native hemp duck as raw material, and the duck is first developed by adding salt and spices, and then smoked and air-dried, and the duck is not blown after the finished product. If the wind-blown duck continues to be processed, it can only be marinated as a cooked food series of nine-foot duck by adding star anise, fennel, Sichuan pepper, tangerine peel and other spices.
