There are different theories about the origin of the Dingsheng cake. One of the most widely circulated sayings is that when the Yang generals set out on the expedition in the Northern Song Dynasty, the soldiers marched with the cakes prepared for them spontaneously by the people, and named it "Dingsheng Cake". After the Song Dynasty crossed to the south, Dingsheng cake also spread to Lin'an, Hangzhou, and became famous here, and then became one of the traditional specialty cakes in Hangzhou. The method of making the cake is not complicated. Put the japonica rice flour and glutinous rice flour with red yeast rice powder into the mold and press it firmly, scrape the noodles with a knife, steam the cake noodles with a fierce fire and take them out to maturity, and turn them over and buckle them on the board. Dingsheng cake is mostly flower-shaped or ingot-shaped, the color is light pink, and there is bean paste filling or osmanthus sugar filling, which is soft and sweet and glutinous.

Osmanthus cake
Osmanthus cake is not a traditional Hangzhou pastry. In Nanjing, Jiangsu, Xianning, Hubei and other places, there are osmanthus cakes. Hangzhou's osmanthus cakes are mostly made of wheat flour, mung bean flour, peanuts, sesame seeds, red dates and lotus seeds, which are soft and glutinous and fragrant, with the rich aroma of osmanthus flowers. Customers can also choose from bean paste, chestnut and green tea flavors according to their taste preferences.
