Xiao Shaoxing Chicken Congee is a traditional Shanghai snack with a history of more than 70 years. The founder came to Shanghai from Shaoxing, and in the early days, he set up a stall on what is now Yunnan South Road to sell chicken porridge, and even the well-known Peking Opera performance artist Zhou Xinfang was his frequent customer. Because the small Shaoxing chicken porridge is boiled directly with chicken soup, the whole bowl of porridge reveals the fresh fragrance of chicken soup, and the japonica rice is sticky and slippery after the entrance, and the taste is just right. However, it is a pity that many shops are pursuing the lowest cost, omitting the cumbersome steps of boiling chicken soup and porridge, and only adding chicken fat to the white porridge, which makes the chicken porridge greatly reduced in taste.
